& is "reserved" in XML. You have to spell it &amp; And I think you
need an additionnal pair of parens arounf the query.

<ldap-query server="search" ldap-search="o=cnamts,c=fr">
  (&amp;(givename="tot*")(email="tot*"))
</ldap-query>

BTW: I've made an XSP taglib for querying an LDAP server. You can find
it (with some docs) at http://dpt-info.u-strasbg.fr/~alain/ldap/. It
appears to be useable, afaik.
