The documentation is rather thin at this point.  Suggestions for

The "most" modules are defined in config.m4 files in the module src
directories.  The easiest way for a non-programmer to find them is just to
run "configure" and watch the output, which should tell you what modules
are included.

To modify the list, just include --disabe-modules="mod1 mod2 mod3" after
the --enable-modules=most.
