I thought we only support [one writeable store|https://github.com/apache/jackrabbit-oak/blob/54067d51590e913616c23de5332e53cb66018b8c/oak-store-composite/src/main/java/org/apache/jackrabbit/oak/composite/CompositeNodeStore.java#L70]?

The main objective of this implementation is to proxy operations working on at most single
read-write store with any number of read-only stores
