Define XML entities at the start of config.xml like this...

<?xml version="1.0"?>
<!DOCTYPE config [
<!ENTITY bayesianSpamRecipient "spam@bayesian.filter">
<!ENTITY bayesianHamRecipient "ham@bayesian.filter">
<!ENTITY bayesianSpamManager "spamManager@bayesian.filter">
]>

...and reference them like this...

<mailet match="RecipientIs=&bayesianSpamRecipient;"
class="JDBCBayesianAnalysisFeeder">
