I had similiar problems on a Linux system. The wrapper that is used to start james killed
it after some time because it thinks that it crashed. I disabled this watchdog behaviour and
now it works. 
Do you have log files?

What Java runtime are you using? OpenJDK? Sun/Oracle JRE?
