I think this would be useful, the assembly plugin config could function as a default with
manifest configuration in the assembly descriptor overriding this configuration.  One question
is how would non-jar archives (zip, tar.gz, etc) be handled?  If you don't include the manifest
in non-jar formats, you would end up with different contents for the same assembly.

Also I just wanted to suggest a workaround which is to configure multiple executions each
with a different archive configuration.
