It looks to me (although I have no OSX system to test this on) that a lot of that cmake command
is unnecessary due to it being dependent on your specific installation.

Does this sequence work with default python/ruby/php installs?

mkdir build
cd build
CC=cc cmake ..

In which case it is only the compiler that makes the difference.
