Thanks for your useful suggestion!
It works with:
public class RegisterAction {
...
   public Country getSelectedCountryObject(String selectedCountry) {
      for (Country c : countryList) {
         if (String.valueOf(c.getCountryId()).equals(selectedCountry))
            return c;
      }
      return new Country(0, "");
   }
...
}

<s:property value="getSelectedCountryObject(country).getCountryName()" />
