This would be really useful!

But removing the server parameter may break a lot of setups out there.

Why not just adding a new parameter like bind-address and b:

$ java -jar tika-app-1.2.jar --bind-address= --server 65535
$ java -jar tika-app-1.2.jar -b127.0.0.1 -s 65535

The p parameter is now also used for a document password:

$ java -jar tika-app-1.2.jar --help
-pX or --password=X    Use document password X
