Tom,

I've used Anakia, and I like it a lot.  It helps if you're already familiar 
with JDOM though.  I posted a really simple example of using Anakia for code 
generation.  It runs from Ant, but you can use it from a servlet as well.

After some more reading a browsing some javadocs, it seems maybe Anakia
might be what I'm looking for. More reading needed....
