[~mck] I ended up reverting code wrt JsonStringEncoder so now can use the old method (since
it was reintroduced in 2.12.5, as it was technically API regression). I hope this makes patch
easier to consider.

A full CI test run would be needed still, although if that has been run before there is no
functional change here. I did however notice that someone had added a Jackson module in the
meantime to support Java 8 date/time types.
